The Beignet – A Childhood Memory

Whether you call it puff puff? mikate? kala? bofrot? or just beignet?  This West African snack is a childhood memory of home.  All you need are 6 ingredients: flour, sugar, yeast, salt, water, oil and voila!  Try it…you are sure to love it! Here is the recipe:


Puff Puff African deep fried dough



  • 3 1/2 cups of flour
  • 1/2 cup of sugar
  • 1 packet of active dry yeast
  • 1 pinch of salt
  • 2 cups warm water
  • Oil for frying


  1. Mix the sugar, yeast, salt in a mixing bow
  2. Slowly add the warm water to the dry mix until you get a smooth batter
  3. Cover the mixture and set aside for about 1-2 hour
  4. In a large pan, pour vegetable oil at least 3 inches high and heat until hot
  5. Scoop a little bit of the mixture with your hands and drop the ball in the oil (repeat until the pan is full)
  6. Fry until golden brown and take it out with a spoon and set aside on a napkin to soak up the excess oil
  7. Sprinkle powered sugar to make it sweeter if desired
  8. Enjoy!!
